Along with LowBrau management, I opened Beast + Bounty in 2018. Fine dining experience was given in detail to each guest. Seasonal (often several times a month) food, wine, and spirit training was essential to this position. Extensive knowledge of flavor profiles and ingredients of each food and beverage menu item was trained and studied thoroughly. I also trained new staff and took care of many private events and larger, banquet-style parties.

Curated cocktail and beer list, designed specifically to pair with Japanese/American fusion menu. Weekly beer and spirit classes. Maintained bar inventory and staff scheduling as well as day-to-day operations.

of The Flip Truck, I oversaw and maintained a hands-on approach to operations. During a time when food trucks were booming in food commerce, I essentially partnered in production from the ground up. I created and designed the brand and it's menus along with the co-owner and executive chef.
